Cherry Tomatoes & Poached Egg Skillet Fry
Eggs: 5
Cherry Tomatoes: 1 pint, halved
Onion: 1/2 large, sliced
Ginger Garlic paste: 1 tsp
Turmeric powder: 1/2 tsp
Garam Masala: 1/2 tsp
Oil: 1 tbsp
Salt & pepper
Cilantro
Heat oil in a skillet. Add sliced onions and turmeric and sauté till lightly caramelized. Add ginger garlic paste and sauté for a couple more minutes. Add halved cherry tomatoes and toss well. Sauté till tomatoes are roasted well. Add salt and garam masala mix well. Gently break eggs on top of the cooked tomato mixture making sure there is enough space between the eggs.
Sprinkle more salt and pepper and cover with lid and turn flame to lowest setting. Cook till eggs set. Garnish with chopped cilantro.
Serve hot!
