Delicious chicken curry using whole spices! So simple and so tasty!

Ingredients
1 kg or 2 lbs chicken, cubed.
300 gms beaten yogurt
2 tablespoon ginger/garlic paste
2-3 bay leaves
2 sticks of 1 ½ inch cinnamon stick
1 ½ teaspoon cumin seeds
6-7 green cardamoms
12-14 cloves
¾ teaspoon black pepper corns
2 black cardamoms
5 whole dry red chilies
1 ½ cup sliced onion
1 large onion for birista (fried crushed onion)
6-7 slit green chilies, slit (adjust according to tolerance level!)
2 tablespoons ghee
3 tablespoons oil
Salt to taste
Grind to a coarse powder:
1 blade mace
¼ piece nutmeg
1 tablespoon coriander seeds
Method
In a heavy bottom pan or handi, heat oil and ghee together
Add bay leaves, cumin seeds and allow it to splutter
Add ginger garlic and fry for few seconds
Add onions and little salt, fry for a minute
Add cinnamon, black peppercorns, green and black cardamom, cloves, dried red chilies and mix
Cook until onions are very soft and spices have released the aroma
Add chicken and green chilies, sauté for 3-4 minutes
Add whisked yogurt and stir continuously until yogurt blends well
Now add coarse masala (spice) powder and mix well
Cover and cook until chicken is tender
On another burner, heat some oil in a small pan and fry the finely chopped onion with a pinch of salt, turmeric and chili powder, till brown.
Add browned onion and check for seasoning.
Cook for another minute and serve hot with any kind of Indian bread or rice.
NOTE: Since this dish is made with whole spices, eat carefully so you don’t bite into one!!!
