Chimichurri Fries

2 large potatoes: cut into desired shape and size
Olive oil, salt and pepper for drizzling.
Chimichurri Sauce: 1/4 cup or according to your preference.

Heat oven to 400 degrees F
Spray a baking sheet with nonstick cooking spray.
Drizzle sliced potatoes with olive oil, salt and pepper. Toss well to coat.
Spread on the baking sheet in a single layer.
Bake for around 10-15 minutes, tossing once.
When they are almost done, remove, toss in Chimichuri sauce and put back in the oven.
Broil on high for a couple of minutes or till the potatoes start sizzling.
Be careful not to burn them.
Check seasoning and serve hot!

Optional: Sprinkle red pepper flakes.
