There is no set recipe for the noodles I make…I tried to remember what I could from how my mom used to make it when we were kids and tweaked it based on what vegetables I have on hand.
What I used for this dish…
Al dente boiled noodles, tossed in oil and kept aside.
Scrambled eggs with salt and pepper
Sautéed mushrooms
Grilled, sliced sausage ( I used chicken, basil, tomato sausage. You can use any protein you wish)
Shredded carrots
Shredded white and purple cabbage
Crushed garlic cloves
Sugar
Salt and Pepper to taste
Aji-no-moto (strictly optional)
Soya sauce (light)
Cilantro for garnish (optional)
The quantities above depend entirely on the quantity of noodles and how many vegetables and/or how much meat you want to use. The recipe is very flexible.
I personally like to drown my noodles in veggies and meat…as you can tell!
In a large wok, heat oil on high.
Add 3-4 crushed garlic pods and stir quickly. Do not burn.
Add 1 heaped tsp sugar and stir quickly till it caramelizes.
Add carrots quickly and stir continuously.
Add shredded cabbage and toss, stirring often.
Lower heat.
Add boiled noodles, soya sauce, salt, pepper and aji-no-moto.
Toss well gently till everything is mixed well.
Add in mushrooms, scrambled eggs and sausage.
Toss well and remove from heat.
Check and adjust seasoning.
Garnish with chopped cilantro.
